Ingredients:
- 4 salmon fillets, 6 oz (170g) each
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) cracked black pepper
- 1 tbsp (15ml) avocado oil
- 2 tbsp (42g) raw honey
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (15ml) low-sodium soy sauce
- 3 cloves (9g) garlic, minced
- 1/2 tsp (2g) grated fresh ginger
Instructions:
- Pat the salmon fillets bone dry with paper towels. Note: Water on the surface creates steam, which prevents a crisp sear.
- Season both sides with kosher salt and cracked black pepper.
- Heat avocado oil in a large skillet over medium high heat until it shimmers.
- Place fillets skin side up and sear for 3–5 minutes without moving them, until a golden brown crust forms.
- While the salmon sears, whisk together the honey, lemon juice, soy sauce, minced garlic, and ginger in a small bowl.
- Flip the fillets and immediately pour the honey garlic glaze into the pan around the fish.
- As the sauce bubbles and thickens into a syrupy consistency (about 2–3 minutes), continuously baste the top of the fillets with a spoon.
- Remove from heat once the glaze coats the fish in a glossy, mahogany sheen.
