Ingredients:

  • 4 salmon fillets, 6 oz (170g) each
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) cracked black pepper
  • 1 tbsp (15ml) avocado oil
  • 2 tbsp (42g) raw honey
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (15ml) low-sodium soy sauce
  • 3 cloves (9g) garlic, minced
  • 1/2 tsp (2g) grated fresh ginger

Instructions:

  1. Pat the salmon fillets bone dry with paper towels. Note: Water on the surface creates steam, which prevents a crisp sear.
  2. Season both sides with kosher salt and cracked black pepper.
  3. Heat avocado oil in a large skillet over medium high heat until it shimmers.
  4. Place fillets skin side up and sear for 3–5 minutes without moving them, until a golden brown crust forms.
  5. While the salmon sears, whisk together the honey, lemon juice, soy sauce, minced garlic, and ginger in a small bowl.
  6. Flip the fillets and immediately pour the honey garlic glaze into the pan around the fish.
  7. As the sauce bubbles and thickens into a syrupy consistency (about 2–3 minutes), continuously baste the top of the fillets with a spoon.
  8. Remove from heat once the glaze coats the fish in a glossy, mahogany sheen.
