Ingredients:

  • ½ cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • Zest of 1 lemon
  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 1 tablespoon olive oil
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine softened butter, minced garlic, parsley, thyme, rosemary, lemon zest, salt, and pepper. Mix until well combined and set aside.
  3. Pat chicken thighs dry with paper towels. Rub olive oil onto chicken, then season generously with salt and pepper.
  4. Using your hands or a spatula, spread the garlic herb butter evenly on top of each chicken thigh. Ensure some butter gets under the skin for extra flavor.
  5. Place the chicken thighs in a baking dish, skin-side up. Bake for 30-35 minutes, or until chicken skin is golden brown and crispy.
  6. Use a meat thermometer to check for doneness (165°F or 74°C internal temperature).
  7. Let the chicken rest for 5 minutes before serving. Garnish with additional fresh herbs and serve with lemon wedges, if desired.
