Ingredients:
- ½ cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- Zest of 1 lemon
- 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
- 1 tablespoon olive oil
- Lemon wedges, for serving (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine softened butter, minced garlic, parsley, thyme, rosemary, lemon zest, salt, and pepper. Mix until well combined and set aside.
- Pat chicken thighs dry with paper towels. Rub olive oil onto chicken, then season generously with salt and pepper.
- Using your hands or a spatula, spread the garlic herb butter evenly on top of each chicken thigh. Ensure some butter gets under the skin for extra flavor.
- Place the chicken thighs in a baking dish, skin-side up. Bake for 30-35 minutes, or until chicken skin is golden brown and crispy.
- Use a meat thermometer to check for doneness (165°F or 74°C internal temperature).
- Let the chicken rest for 5 minutes before serving. Garnish with additional fresh herbs and serve with lemon wedges, if desired.
