Ingredients:

  • 115 g Unsalted Butter, softened
  • 200 g Brown Sugar, packed
  • 50 g Large Egg, room temperature
  • 5 ml Vanilla Extract
  • 190 g All-Purpose Flour
  • 3 g Baking Soda
  • 1.5 g Salt
  • 130 g Unsweetened Shredded Coconut

Instructions:

  1. Cream together the softened butter and brown sugar until pale and fluffy. Beat in the egg and vanilla extract until smooth.
  2. Sift in the flour, baking soda, and salt. Mix on low speed until just combined. Fold in the shredded coconut by hand until evenly distributed.
  3. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart. Bake at 350°F (175°C) for 9–11 minutes.
