Ingredients:
- 115 g Unsalted Butter, softened
- 200 g Brown Sugar, packed
- 50 g Large Egg, room temperature
- 5 ml Vanilla Extract
- 190 g All-Purpose Flour
- 3 g Baking Soda
- 1.5 g Salt
- 130 g Unsweetened Shredded Coconut
Instructions:
- Cream together the softened butter and brown sugar until pale and fluffy. Beat in the egg and vanilla extract until smooth.
- Sift in the flour, baking soda, and salt. Mix on low speed until just combined. Fold in the shredded coconut by hand until evenly distributed.
- Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart. Bake at 350°F (175°C) for 9–11 minutes.
