Ingredients:
- 1/2 cup (45g) unsweetened cocoa powder
- 3/4 cup (150g) coconut sugar
- 1 cup (240ml) filtered water
- 1/4 tsp (1.5g) fine sea salt
- 1 tsp (5ml) pure vanilla extract
- 1 tbsp (14g) melted coconut oil
Instructions:
- In a small saucepan, combine the cocoa powder, coconut sugar, and sea salt. Whisk vigorously for 30 seconds until the mixture is a uniform brown color and no large clumps remain.
- Slowly pour in the water while whisking constantly to create a smooth paste.
- Turn the heat to medium and bring the mixture to a gentle simmer. Continue to whisk occasionally for 5–8 minutes until the syrup thickens slightly and develops a glossy, mahogany sheen.
- Remove the pan from the heat immediately. Stir in the vanilla extract and the melted coconut oil. Whisk until the fat is fully incorporated and the syrup is velvety.
- Allow the syrup to cool for 10 minutes before transferring to a glass storage jar.
