Ingredients:

  • 4 center-cut salmon fillets (6 oz each)
  • 1 tsp kosher salt
  • 0.5 tsp coarse black pepper
  • 1 tbsp olive oil
  • 3 tbsp Dijon mustard
  • 1.5 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp fresh lemon juice
  • 0.25 tsp smoked paprika
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. Use paper towels to pat the salmon fillets completely dry. Season the fillets generously with 1 tsp of kosher salt and 0.5 tsp of coarse black pepper; let sit for 2 minutes.
  3. In a small mixing bowl, whisk together the Dijon mustard, honey, minced garlic, lemon juice, and smoked paprika until a thick, emulsified glaze forms.
  4. Place the salmon fillets on the prepared baking sheet. Brush the tops of the fillets generously with the Dijon glaze, making sure to cover the edges.
  5. Bake for 12 to 15 minutes, depending on the thickness of the fillets, until the internal temperature reaches 145°F or the glaze has turned a deep mahogany color.
  6. Remove from the oven and let rest for 3 minutes. Garnish with fresh chopped parsley before serving.
