Ingredients:
- 1/2 cup (120g) plain hummus
- 1 tsp (5g) Dijon mustard
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (15ml) extra virgin olive oil
- 2 tbsp (30ml) filtered water
- 1/4 tsp (1.5g) sea salt
- 1/8 tsp (0.5g) cracked black pepper
Instructions:
- Combine the hummus and Dijon mustard in a small mixing bowl or mason jar. Whisk vigorously until the mixture is completely smooth and the mustard is fully incorporated.
- Slowly whisk in the lemon juice and olive oil. Continue whisking until the texture becomes glossier and a consistent, velvety sheen appears.
- Add filtered water one tablespoon at a time, whisking after each addition. Stop when the dressing reaches a 'ribbon stage,' where it pours slowly off the whisk leaving a visible trail. Finish by stirring in salt and pepper.
