Ingredients:

  • 1/2 cup (120g) plain hummus
  • 1 tsp (5g) Dijon mustard
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tbsp (15ml) extra virgin olive oil
  • 2 tbsp (30ml) filtered water
  • 1/4 tsp (1.5g) sea salt
  • 1/8 tsp (0.5g) cracked black pepper

Instructions:

  1. Combine the hummus and Dijon mustard in a small mixing bowl or mason jar. Whisk vigorously until the mixture is completely smooth and the mustard is fully incorporated.
  2. Slowly whisk in the lemon juice and olive oil. Continue whisking until the texture becomes glossier and a consistent, velvety sheen appears.
  3. Add filtered water one tablespoon at a time, whisking after each addition. Stop when the dressing reaches a 'ribbon stage,' where it pours slowly off the whisk leaving a visible trail. Finish by stirring in salt and pepper.
