Ingredients:
- 1.5 lbs salmon fillets, skin-on
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/4 cup pure maple syrup
- 2 tbsp light brown sugar
- 1 tbsp soy sauce
- 1 tbsp fresh lime juice
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
Instructions:
- Pat the salmon fillets completely dry with paper towels. Note: Moisture on the surface creates steam, which prevents the glaze from sticking.
- Rub each fillet with olive oil and season with salt and pepper.
- Place the seasoned fillets skin side down on a parchment lined baking sheet.
- In a small bowl, whisk together the maple syrup, brown sugar, soy sauce, lime juice, minced garlic, and smoked paprika until the sugar crystals have dissolved.
- Generously brush the glaze over the top of each fillet. Note: Use a silicone brush to ensure an even, thick layer.
- Set your oven to broil (high).
- Place the pan on the top rack.
- Broil for 8–12 minutes until the glaze bubbles and turns a deep mahogany brown.
- Check the internal temperature with a meat thermometer. Pull it out at 135°F (57°C) for medium rare or 145°F (63°C) for medium.
- Let the fish rest for 3 minutes before serving. Note: This allows the juices to redistribute for a velvety texture.
