Ingredients:

  • 4 salmon fillets, 6 oz each
  • 2 tbsp coarsely cracked black peppercorns
  • 1 tsp kosher salt
  • 1 tbsp avocado oil
  • 3 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika

Instructions:

  1. Pat the salmon fillets bone-dry with paper towels. In a small bowl, combine the cracked pepper and salt. Press the mixture firmly into the top side of each fillet to create a thick crust.
  2. Heat avocado oil in a cast iron skillet over medium-high heat until shimmering. Place fillets crust-side down and press gently with a spatula. Sear for 3–4 minutes without moving them until the crust is deeply browned.
  3. Flip the fillets. Pour the combined maple syrup, soy sauce, lemon juice, minced garlic, and smoked paprika directly into the pan around the fish.
  4. As the glaze bubbles and reduces, continuously baste the salmon with a spoon. Remove from heat when the internal temperature reaches 130°F (54°C).
