Ingredients:
- 4 salmon fillets, 6 oz each
- 2 tbsp coarsely cracked black peppercorns
- 1 tsp kosher salt
- 1 tbsp avocado oil
- 3 tbsp maple syrup
- 1 tbsp soy sauce
- 1 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
Instructions:
- Pat the salmon fillets bone-dry with paper towels. In a small bowl, combine the cracked pepper and salt. Press the mixture firmly into the top side of each fillet to create a thick crust.
- Heat avocado oil in a cast iron skillet over medium-high heat until shimmering. Place fillets crust-side down and press gently with a spatula. Sear for 3–4 minutes without moving them until the crust is deeply browned.
- Flip the fillets. Pour the combined maple syrup, soy sauce, lemon juice, minced garlic, and smoked paprika directly into the pan around the fish.
- As the glaze bubbles and reduces, continuously baste the salmon with a spoon. Remove from heat when the internal temperature reaches 130°F (54°C).
